Title- Yes/No / ,%/114 o as HAMBURGERS January 7,2014 Attn: Rudy Phillips- On Sunday,January 5, 2014 at 11:20a,a defective fuse link caused our fire suppression system to go off. It contaminated the cooking area causing us to throw away the following items: an open bag of buns (less than 12),a pot of chili, a pot of hickory sauce, 6 apple and 6 apricot fried pies, a pan of bacon,and everything in the front line refrigerator(cheese, lettuce,tomatoes,onions, pickles, mayonnaise, mustard, relish sauce, pickle relish,and sauerkraut).We also disposed of the contaminated fry shortening in our two fryers,along with a loaf of texas toast and a pan of liquid butter. After throwing away all the contaminated items,we did a thorough cleaning of the restaurant, especially including the contaminated areas and cooking utensils.We cleaned and sanitized all the affected areas/items while waiting for Kimbrough to come out and reset the fire suppression system. At 4p Sunday night, Kimbrough arrived and reset the system,explaining that it looked like there was a defective fuse link,which caused the system to go off.There was no fire. Monday morning health inspection informed us to conduct a more thorough cleaning.We removed all the equipment behind the counter and in the kitchen,cleaned and sanitized everything from ceiling to floor,along with the walk-in cooler. We also were informed to have our ventahood cleaned thoroughly. We performed all of the above duties yesterday and are ready to reopen as soon as possible.Thank you for your efforts.
